Tattie Soup

  • 2 pints chicken stock
  • 2lbs potatoes, chopped
  • 1 large onion, chopped
  • 3 medium carrots, chopped
  • 1 bunch chives, chopped
  • Salt and pepper, to taste

Methods/steps

Bring stock to a boil, add everything but chives. Simmer for 20 minutes. Puree in blender. Sprinkle with chives and serve.

Additional Tips

'I do my leek and tattie soup a wee bit differently.

Melt a decent sized knob of butter in the pot and then add the vegetables and coat them in the melted butter. Then crumble in two chicken stock cubes and also coat the vegetables with them. Add pepper and just a pinch of salt (there is salt in the stock cubes), add water till vegetables are covered and bring to the boil. Simmer for 20 minutes. Eat with crusty bread and a glass of dry white wine.' (Laphroaig13)
