Sweet Potato Puree with Praline

The puree:
  • 2kg sweet potatoes, peeled and sliced
  • 125ml fresh orange juice
  • 80ml maple syrup
  • 45ml soft butter
  • 2tbsp brown rum
  • 3/4 teaspoon salt
  • 1 pinch of nutmeg
  • Black pepper

The praline:
  • 125ml brown sugar (or muscovado)
  • 6tbsp soft butter (90ml)
  • 185ml pecans, chopped

Methods/steps

Preheat the oven on 180°C.
Boil sweet potatoes until tender. Mash them. Blend in all other ingredients to create the puree. Pour into a baking dish.

In a bowl, mix the praline ingredients. Spread over the puree with your fingers.
Bake for 45 minutes (check the time).

Additional Tips

You can just cook the puree and serve it as a side dish... great with chicken or turkey.
