The puree:
The praline:
- 2kg sweet potatoes, peeled and sliced
- 125ml fresh orange juice
- 80ml maple syrup
- 45ml soft butter
- 2tbsp brown rum
- 3/4 teaspoon salt
- 1 pinch of nutmeg
- Black pepper
The praline:
- 125ml brown sugar (or muscovado)
- 6tbsp soft butter (90ml)
- 185ml pecans, chopped
Methods/steps
Preheat the oven on 180°C.
Boil sweet potatoes until tender. Mash them. Blend in all other ingredients to create the puree. Pour into a baking dish.
In a bowl, mix the praline ingredients. Spread over the puree with your fingers.
Bake for 45 minutes (check the time).
