Strawberry Mousse

  • 500g strawberries (+4 to decorate)
  • 200ml cream
  • 1teaspoon of lemon juice (optional)
  • 100g icing sugar
  • 3 egg whites

Methods/steps

Tail the strawberries. Blend or bruise them with a fork. Pour into a large bowl, add the lemon juice (optional) and the sugar.
Pour the cream into a bowl and keep in the fridge for 30 minutes.
Whip cream till stiff and fold it in the strawberry puree.
Beat egg whites till stiff and fold them in the mixture.
Pour the mousse into cups and keep in the fridge for at least 2 hours. Decorate with whole or sliced strawberries.

Additional Tips

You can add yogurt to the mousse (1/3 of the cream quantity). For a tasty variation, replace sugar by honey.
And for a total delight, enjoy the mousse with biscuits (e.g. shortbread).
