Stilton Soup

  • 350g onions
  • 2tbsp butter
  • 2 teaspoon plain flour
  • 1 litre of chicken stock
  • 200g Stilton cheese
  • 150g cream
  • 1 pinch of ground nutmeg
  • Salt and pepper
  • Parsley

Methods/steps

Peel and chop the onions.
Heat butter in a large saucepan. Add the onions and sauté them gently (over a slow heat) for around 10 minutes.
Add the flour, stir and cook for 1 minute.

Pour the stock and bring to the boil.

Turn down the heat. Crumble the Stilton and add it to the soup. Stir over a low heat till it's melted, then add the cream.
Season with salt, pepper and nutmeg.

Serve with chopped parsley.
