Spinach Salad with Beetroot and Smoked Mackerel

  • 2 fillets of smoked mackerel
  • 150g spinach leaves
  • 1 beetroot, cooked and peeled
  • 12 'grenaille' potatoes (or 6-7 of another larger variety)
  • 100ml white wine
  • 3tbsp olive oil
  • 1tbsp anisette
  • Juice of 1 lemon
  • Salt and pepper

Methods/steps

Boil unpeeled potatoes for 12 to 15 minutes (more if you use larger potatoes).
Prick them with a fork and sprinkle them with white wine. Add pepper.

Slice the beetroot.
In a bowl, mix together lemon juice, salt, pepper, anisette and olive oil.
Add beetroot slices, potatoes, chopped mackerel and spinach.
Mix well and serve immediately.

Additional Tips

You can replace spinach by corn salad.
