Spinach Salad with Beetroot and Smoked Mackerel

- 2 fillets of smoked mackerel
- 150g spinach leaves
- 1 beetroot, cooked and peeled
- 12 'grenaille' potatoes (or 6-7 of another larger variety)
- 100ml white wine
- 3tbsp olive oil
- 1tbsp anisette
- Juice of 1 lemon
- Salt and pepper
Methods/steps
Boil unpeeled potatoes for 12 to 15 minutes (more if you use larger potatoes).
Prick them with a fork and sprinkle them with white wine. Add pepper.
Slice the beetroot.
In a bowl, mix together lemon juice, salt, pepper, anisette and olive oil.
Add beetroot slices, potatoes, chopped mackerel and spinach.
Mix well and serve immediately.
