Spelt and Squids in Tomato Sauce

  • 500g squids (preferably in rings)
  • 400g spelt
  • 250g tomato sauce
  • 150ml dry white wine
  • 200ml water
  • 2 shallots
  • 1 garlic clove
  • 2tbsp olive oil
  • 1 large knob of butter
  • Salt and pepper, to taste

Methods/steps

Chop shallots and garlic.
Pour olive oil in a saucepan. Cook garlic, shallots, salt and squid rings over a brisk heat, till squids are coloured and the water is evaporated.
Add wine and reduce it. Then add tomato sauce, water and pepper.
Cover and cook for 45 minutes over a slow heat.

Meanwhile, cook the spelt in salted boiling water, as indicated on the packet.
Drain and mix into the squids. Cook for 2 or 3 minutes. Add butter and serve.

Additional Tips

For a more fishy and special taste, you can add the ink of the squids with tomato sauce and water.
