- 1kg leeks, chopped (with the green leaves)
- 4 large potatoes, diced
- 3 onions, chopped
- 2 garlic cloves, ground
- 3 or 4 tomatoes, peeled and crushed (or a tin)
- Olive oil
- 1 capsule of saffron
- Salt and pepper
Methods/steps
Heat olive oil in a pan. Add leeks and onions, cook over a slow heat, stirring constantly.
When they start to get coloured, add tomatoes, garlic, saffron, salt and pepper. Simmer for 15 minutes.
Add diced potatoes. Cover with water and cook for 15 to 20 minutes.
Check seasoning.
