Chicken with 40 Garlic Cloves

- 1 small chicken
- 40 garlic cloves (preferably young garlic, without germ)
- 2 large onions
- 1 carrot
- 1 stick of celery
- Around 100ml olive oil
- 75ml white wine
- Salt and pepper
- 1 pinch of Cayenne pepper
- 2 bay leaves
- 2 sprigs of thyme
- 1 sprig of rosemary
- 4 large and thick slices of bread (or more for the gourmands)
Methods/steps
Preheat the oven on 180°C.
Slice the carrot and the celery. Stuff the chicken with them, add 1 sprig of thyme, 1 bay leaf, salt and pepper.
Chop the onions.
Put unpeeled garlic cloves, chopped onions, the bay leaf, rosemary and thyme in a large baking dish with cover.
Season with salt, pepper and Cayenne pepper.
Add the chicken. Pour the olive oil and wine.
Close the dish hermetically (you can make a dough with flour and water and use it to better join the dish and the cover).
Bake for around 90 minutes.
Toast bread and serve.

Additional Tips
Each person bruises garlic on (possibly buttered) bread.
You can also cook a sauce with bruised garlic cloves and chicken juices.
'One of my favourite recipes - YUM... Don't be put off by the seemingly large quantity of garlic... young garlic definitely works best though as it's a much more subtle taste' (WildGarlic).
