Ingredients
- 1lb potatoes
- Beef dripping
- Left over beef
- Salt and pepper
- An onion or a few shallots (for method 2)
Methods/steps
Peel and slice potatoes thinly.
Method 1
Boil potatoes in salted water and simmer until cooked.
Drain potatoes well and stir in dripping until the potatoes are nicely coated.
Shred the left over beef and stir into the potatoes
Season to taste.
Leave to heat on very low heat until ready.
Method 2
Melt some dripping (or cooked fat) in a strong stew pan and allow it to become smoking hot.
Slice an onion or a few shallots and fry in pan.
Add the sliced potatoes to pan.
Season with salt and pepper.
Cover pan and cook very slowly for 1 -2 hours depending on the amount of potatoes.
When ready, stir so as all potatoes come up from bottom of pan and mix well.
Cooked meat or left over meat, shredded or cut into strips can be added to the potatoes.
Keep on low heat until heated thoroughly all the way through.
An alternative is to parboil the potatoes then slice them and follow method 2.
Serve with oatcakes.



Additional Tips
'My mother used to just chop up the left over meat, put it in a heavy saucepan and pour the left over gravy over it.
Then she'd chop up potatoes, onion, turnips, carrots in small cubes as you'd do for making soup.
Then she'd layer the vegetables on top of the meat and gravy, finishing with a layer of potatoes. Sometimes she'd layer some leafs of cabbage as well, if she had any.
Then it would be cooked for hours with the lid on tight and the gas on a peep. That way the vegetables cook in their own juice, she used to say.' (Glesgalass)
