Sweet and Sour Red Cabbage

  • 1 medium red cabbage
  • 1 medium cooking apple
  • 1 dessert spoon chopped sultanas (or sugar)
  • 1 large onion
  • 1 large knob of butter
  • 1 wine glass red wine
  • 1/2 wine glass wine vinegar
  • 1/4 teaspoon each cloves, nutmeg and cinnamon
  • Salt and pepper, to taste.

Methods/steps

Chop cabbage, the onion and the apple.
Melt the butter in a large pan over medium heat.
Add onion, sauté it for 2 or 3 minutes. Add cabbage and sauté until slightly wilted, about 5 minutes, then add the apple.
Add sultanas or sugar and toss. Add vinegar, wine and spices.
Reduce heat to medium-low. Cover, simmer until cabbage is tender, stirring often, about 30 minutes.
Season to taste with salt and pepper.

Additional Tips

You can deliciously add smoked lardons (small pieces of streaky bacon). Just melt them in butter before adding the cabbage.
