Pasta with Leeks, Sweetcorn and Tuna

- Pasta of your choice
- 1 leek
- 2tbsp oil
- 1 good pinch of chilli flakes
- 4tbsp creme fraîche
- 1 chunk cheese, grated
- 1 tin sweetcorn
- 1 tin tuna
- 2 tomatoes
- 1 squeeze of lemon
- Salt and pepper
- Paprika, to taste
Methods/steps
Halve and shred the leek. Chop the tomatoes.
Cook pasta for the recommended time. Meanwhile, cook leek for 5 minutes then add chilli flakes.
Add creme fraîche with cheese and combine, being careful not to boil.
Add tuna, sweetcorn and tomatoes and heat through.
Season with salt and pepper, lemon juice.
Add to drained pasta, sprinkle with paprika before serving.
