Carrot and Bacon Soup

  • 3 pints vegetable stock
  • 4 large carrots, chopped
  • 1 large onion
  • 2 sticks of celery or leek, chopped
  • Salt and pepper, to taste
  • 4 slices of smoked back bacon cut into thin strips
  • Parsley to garnish

Methods/steps

Bring to the boil in the stock the carrots, onion and celery and simmer for about half an hour. Add the bacon and simmer for another half an hour.
Blend to a puree. Garnish with the parsley and serve with hot crusty bread.

Additional Tips

'I have a (my wife would say disgusting) modification to your recipe.....substitute pigs trotters for the bacon...probably not very healthy but surprisingly tasty and excellent on a cold day.' (Jim)

This sounds like the sort of hearty soup I love. I'll give it a go and maybe add those trotters!
