Braised Courgettes with Fresh Herbs
Description A simply delicious and flavoursome side dish.

  • 1.5kg courgettes
  • 6 garlic cloves, chopped
  • 3 large onions, chopped
  • 8 mint leaves
  • 4 teaspoon basil
  • 2 teaspoon oregano
  • 1 sage leaf
  • 1tbsp chopped parsley
  • 1tbsp chopped chives
  • Salt and pepper
  • Olive oil

Methods/steps

Slice courgettes.
Fry the herbs with garlic and onions in olive oil. Add courgettes.
Braise (over a slow heat).

Additional Tips

For a crispy variation, you can add breadcrumbs at the end of cooking... a lovely combination with garlic.
