Jacket Potatoes with Smoked Salmon

  • 4 large potatoes (if not count 2 per person)
  • 200g smoked salmon, thickly sliced
  • Cream
  • Fresh lemon juice
  • Fresh herbs to taste (chives, parsley, dill...), chopped
  • Salt and pepper

Methods/steps

Preheat the oven to 200-225°C.

Wash the potatoes and dry them. Prick the skins a few times with a fork and place in oven.
Bake for 45-50 minutes or until tender.

In a small bowl, mix cream, lemon juice, salt, pepper and herbs.

When you are ready to serve, slit each potato in half lengthways, fill them with smoked salmon and top with the sauce.
Serve immediately.

Additional Tips

This dish is even better with crushed sea salt sprinkled on the potatoes, which gives a lovely crispness.

Serve the potatoes with a salad.
