Braised Potatoes with Bacon and Apples

  • 1 large onion, chopped
  • 1 large knob of butter
  • 6 or 7 potatoes
  • 2 apples (preferably firm, not mealy)
  • Bacon to taste, sliced (lardons)
  • 1 bay leaf
  • Salt and pepper

Methods/steps

Peel, wash and dice potatoes.
Peel and dice apples in small cubes.
Fry onion and bacon with the bay leaf in the butter.
Add the potatoes and stir for 1 or 2 minutes. Cover with hot water, but not completely. Cook till tender.
Add apple cubes and cook for a few minutes (apples should still be firm).
Season with salt and pepper.

Additional Tips

You can also cook potatoes and apples without the bacon, fry it in a separate pan (in slices then, not lardons) and add it crispy on the plates. It makes a lovely crispy/melting meal.
