Belgo-Grampian Chocolate Cake with Lemon Sauce

The pastry:
  • 300g dark bitter chocolate
  • 300g butter (soft)
  • 200g sugar
  • 100g plain flour
  • 6 eggs

The sauce:
  • Rind of 1 lemon and juice of 3
  • 80g butter
  • 100g sugar
  • 3 eggs

Methods/steps

The pastry:
Preheat the oven on 180°C (th.6).
Melt chocolate in small pieces in a bain-marie. Remove from heat. Add the soft butter.
Beat eggs with sugar till mixture gets pale. Add the chocolate and then the sifted flour.
Pour in a round buttered cake pan and bake around 30 minutes (check time).

The sauce:
Beat eggs with sugar and lemon rind.
Put over a slow heat till thickening.
Remove from heat. Add lemon juice and butter in small pieces. Let cool down.

Divide the cake in 2 parts. Pour the sauce on the lower part and put the top back.

Additional Tips

You can serve this cake without the sauce or replace it by jam or jelly (strawberry, cherry, raspberry, apricot...).
